What is a good material to simulate cable for G scale

Try some thin Bowden cable, similar to bike brake cable, ( obvious a lot smaller though). We use short lengths to seal meters
 
Stripped and slightly twisted multi-strand wire? You could even run a little solder along (with plenty of flux) if you need to ensure it doesn't untwist and split. Depends what thickness of cable you need I guess?
 
I would be tempted to use a good thick sewing thread brown colour. I have a good wooden reel ofvthe stuff that I use for buttons and they never come off again when I use it.

Electric guitar or bass strings? I try and save some of my lad's cast-offs, various gauges.
 
If you want to maintain the appearance of the cable being under tension, try shirring elastic thread. I use it to retain loads either on its own often doubled up, or to tension some jewellers chain. It is readily available in a number of thicknesses and colours and most inexpensive.
